Ingredients:
- 2 lbs. beef chuck roast, cut into bite-sized pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 8 oz. sliced mushrooms
- 1/2 cup sour cream
- 2 tablespoons cornstarch
- 1 tablespoon chopped fresh parsley
- 12 oz. egg noodles, cooked according to package instructions
Instructions:
- In a slow cooker, combine the beef chuck roast, onion, garlic, beef broth, Worcestershire sauce, paprika, thyme, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours, or until the beef is tender and cooked through.
- In a small bowl, whisk together the sour cream and cornstarch until smooth.
- Stir in the sliced mushrooms and the sour cream mixture into the slow cooker. Cover and cook for an additional 30 minutes, or until the sauce has thickened.
- Serve the beef stroganoff over cooked egg noodles, garnished with chopped parsley.
