Slow Cooker Beef Stroganoff

Ingredients:
  • 2 lbs. beef chuck roast, cut into bite-sized pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 8 oz. sliced mushrooms
  • 1/2 cup sour cream
  • 2 tablespoons cornstarch
  • 1 tablespoon chopped fresh parsley
  • 12 oz. egg noodles, cooked according to package instructions
Instructions:
  • In a slow cooker, combine the beef chuck roast, onion, garlic, beef broth, Worcestershire sauce, paprika, thyme, salt, and pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours, or until the beef is tender and cooked through.
  • In a small bowl, whisk together the sour cream and cornstarch until smooth.
  • Stir in the sliced mushrooms and the sour cream mixture into the slow cooker. Cover and cook for an additional 30 minutes, or until the sauce has thickened.
  • Serve the beef stroganoff over cooked egg noodles, garnished with chopped parsley.
