For the chicken:
  • 1 whole chicken, about 1.5 kg
  • 1 thumb-sized piece of ginger, sliced
  • 4 cloves garlic, crushed
  • 2 spring onions, cut into pieces
  • 1 tablespoon vegetable oil
  • 2 teaspoons salt
  • 2 teaspoons sesame oil
For the rice:
  • 2 cups jasmine rice
  • 3 cups chicken stock
  • 1 thumb-sized piece of ginger, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
For the dipping sauce:
  • 2 tablespoons grated ginger
  • 2 tablespoons chopped spring onions
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • Rinse the chicken and pat dry. Rub the chicken with salt and sesame oil. Stuff the cavity of the chicken with ginger, garlic, and spring onions.
  • In a large pot, heat the vegetable oil over medium-high heat. Add the chicken and enough water to cover the chicken. Bring to a boil, then reduce heat to a simmer and cook for 30-40 minutes or until the chicken is cooked through. Remove the chicken from the pot and let it rest for 10 minutes.
  • In the meantime, rinse the rice until the water runs clear. Drain the rice and set it aside.
  • Heat a large pot over medium heat. Add ginger and garlic and stir-fry for 1-2 minutes until fragrant. Add the rice and stir-fry for another 1-2 minutes until it's well coated with the ginger and garlic.
  • Pour in the chicken stock and add salt and sesame oil. Stir well and bring to a boil. Reduce heat to low, cover the pot and let it simmer for 15-20 minutes or until the rice is cooked.
  • In a small bowl, mix together the dipping sauce ingredients.
  • Once the chicken has rested, cut it into pieces and serve with the rice and dipping sauce.
