here's a recipe for Hainanese Chicken Rice, a popular dish in Southeast Asia:
Ingredients:
For the chicken:
- 1 whole chicken, about 1.5 kg
- 1 thumb-sized piece of ginger, sliced
- 4 cloves garlic, crushed
- 2 spring onions, cut into pieces
- 1 tablespoon vegetable oil
- 2 teaspoons salt
- 2 teaspoons sesame oil
For the rice:
- 2 cups jasmine rice
- 3 cups chicken stock
- 1 thumb-sized piece of ginger, sliced
- 2 cloves garlic, crushed
- 1 teaspoon salt
- 1 teaspoon sesame oil
For the dipping sauce:
- 2 tablespoons grated ginger
- 2 tablespoons chopped spring onions
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
Instructions:
- Rinse the chicken and pat dry. Rub the chicken with salt and sesame oil. Stuff the cavity of the chicken with ginger, garlic, and spring onions.
- In a large pot, heat the vegetable oil over medium-high heat. Add the chicken and enough water to cover the chicken. Bring to a boil, then reduce heat to a simmer and cook for 30-40 minutes or until the chicken is cooked through. Remove the chicken from the pot and let it rest for 10 minutes.
- In the meantime, rinse the rice until the water runs clear. Drain the rice and set it aside.
- Heat a large pot over medium heat. Add ginger and garlic and stir-fry for 1-2 minutes until fragrant. Add the rice and stir-fry for another 1-2 minutes until it's well coated with the ginger and garlic.
- Pour in the chicken stock and add salt and sesame oil. Stir well and bring to a boil. Reduce heat to low, cover the pot and let it simmer for 15-20 minutes or until the rice is cooked.
- In a small bowl, mix together the dipping sauce ingredients.
- Once the chicken has rested, cut it into pieces and serve with the rice and dipping sauce.
