Ingredients:
- 1 cup of rolled oats
- 1/2 cup of whole wheat flour
- 1/4 cup of almond flour
- 1/4 cup of brown sugar
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of ground cinnamon
- 1/2 tsp of salt
- 2 ripe bananas, mashed
- 1/2 cup of unsweetened applesauce
- 1/4 cup of almond milk
- 1 egg
- 1 tsp of vanilla extract
- 1/2 cup of chopped walnuts (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Line a muffin tin with paper liners.
- In a large bowl, mix together the rolled oats, whole wheat flour, almond flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, mix together the mashed bananas, applesauce, almond milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Fold in the chopped walnuts (optional).
- Spoon the muffin batter into the paper liners, filling each cup about 3/4 full.
- Bake the muffins in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool for a few minutes before serving.
