recipe for Australian Lamingtons

Here's a classic recipe for Australian Lamingtons:

Ingredients:

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 4 cups unsweetened shredded coconut
  • 3 cups powdered sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup boiling water
  • 1/2 cup unsalted butter, melted

Instructions:

  • Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • Add the dry ingredients to the wet ingredients in two batches, alternating with the milk, and beat until just combined.
  • Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan before removing it.
  • Cut the cake into 16 squares.
  • Spread the coconut on a baking sheet and bake for 5-7 minutes or until lightly toasted.
  • In a medium bowl, whisk together the powdered sugar, cocoa powder, and boiling water until smooth.
  • Dip each cake square into the chocolate mixture, then roll it in the toasted coconut until completely covered.
  • Set each cake square on a wire rack to allow the chocolate to harden.
  • Drizzle the melted butter over each cake square, if desired.
