Ingredients:
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 4 cups unsweetened shredded coconut
- 3 cups powdered sugar

- 1/2 cup boiling water
- 1/2 cup unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9-inch square baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Add the dry ingredients to the wet ingredients in two batches, alternating with the milk, and beat until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan before removing it.
- Cut the cake into 16 squares.
- Spread the coconut on a baking sheet and bake for 5-7 minutes or until lightly toasted.
