How to Make Authentic Massaman Curry: A Delicious Thai Dish

  • 2 cardamom pods
  • 2 bay leaves
  • 2 star anise
  • Salt, to taste
  • Water, as needed


  • In a large pot, heat the oil over medium heat. Add the garlic and onion and sauté until fragrant.
  • Add the Massaman Curry paste and stir until fragrant.
  • Add the beef or chicken and stir until browned.
  • Add the coconut milk, tamarind paste, palm sugar, fish sauce, roasted peanuts, and spices (cinnamon stick, cardamom pods, bay leaves, and star anise). Stir well and bring to a boil.
  • Add the potatoes and enough water to cover the ingredients. Stir well and let it simmer over low heat for 30-40 minutes, or until the beef or chicken is tender and the potatoes are cooked.
  • Season with salt to taste.
  • Serve the Massaman Curry with steamed rice.


  • You can make your own Massaman Curry paste by blending together ingredients like lemongrass, galangal, garlic, shallots, dried chili, coriander seeds, cumin seeds, cardamom, cinnamon, and cloves. Alternatively, you can use store-bought curry paste for convenience.
